Spiced Winter Vegetable Stew with Toasted Pistachios

This stew is hearty, flavorful, and perfect for a cold winter evening. The combination of spices creates a warm and inviting aroma, while the vegetables provide a healthy and satisfying base.

Ingredients:

  • For the Stew:
    • 2 tablespoons olive oil
    • 1 onion, chopped
    • 2 cloves garlic, minced

  3. Build the Stew: Pour in the vegetable broth and diced tomatoes. Add the sweet potato, butternut squash, carrots, and parsnips. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the vegetables are tender.
  4. Season and Garnish: Remove the bay leaves and star anise. Season the stew with salt to taste.
  5. Toast the Pistachios: While the stew simmers, toast the pistachios in a dry skillet over medium heat until fragrant and lightly browned.
