Ingredients:

1 whole chicken (about 3-4 pounds)
- 2 tablespoons olive oil
- 1 tablespoon All-Purpose Seasoning
- 1 teaspoon black peppercorns, coarsely ground
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 2 bay leaves (optional, but recommended if you have some on hand)
- 1 pound carrots, peeled and chopped
- 1 pound potatoes, peeled and chopped
- 1 onion, chopped
- Salt to taste (since your All-Purpose seasoning may already contain salt)
Instructions:
- Preheat oven to 375°F (190°C).
- Rinse the chicken and pat it dry. Rub the chicken inside and out with olive oil.
- In a small bowl, combine the All-Purpose Seasoning, pepper, garlic powder, onion powder, and paprika. Sprinkle the seasoning mixture all over the chicken.
- Place the bay leaves (if using) and half of the chopped onion inside the cavity of the chicken.
- Place the carrots, potatoes, and remaining onion in a roasting pan around the chicken.
- Roast the chicken for 1 1/2 to 2 hours, or until the internal temperature reaches 165°F (74°C) and the juices run clear when pierced with a fork.
