Ingredients:

  • For the Chicken Marinade:
    • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
    • 1 cup plain yogurt
    • 1 tablespoon ginger, grated
    • 2 cloves garlic, minced
    • 1 tablespoon lemon juice
    • 1 teaspoon turmeric powder
    • 1 teaspoon cumin powder
    • 1 teaspoon coriander powder
    • 1 teaspoon garam masala
    • 1/2 teaspoon chili powder
    • 1/2 teaspoon salt
  • For the Sauce:
    • 2 tablespoons vegetable oil
    • 1 large onion, finely chopped
    • 2 cloves garlic, minced
    • 1-inch piece ginger, grated
    • 1 (28 ounce) can crushed tomatoes
    • 1 cup heavy cream
    • 1 teaspoon garam masala
    • 1/2 teaspoon chili powder
    • 1/4 teaspoon ground cardamom
    • Salt to taste
    • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Marinate the Chicken: In a large bowl, combine all the marinade ingredients. Add the chicken and coat well. Cover and refrigerate for at least 2 hours, or preferably overnight.
  2. Cook the Chicken: Preheat your oven to 400°F (200°C). Thread the marinated chicken onto skewers and bake for 20-25 minutes, or until cooked through. Alternatively, you can pan-fry or grill the chicken.
  3. Make the Sauce: While the chicken is cooking, heat the oil in a large pan over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and ginger and cook for another minute.
  4. Simmer the Sauce: Stir in the crushed tomatoes, heavy cream, garam masala, chili powder, and cardamom. Bring to a simmer and cook for 15-20 minutes, or until the sauce has thickened slightly. Season with salt to taste.
  5. Combine and Serve: Add the cooked chicken to the sauce and stir to coat. Garnish with fresh cilantro and serve hot with rice or naan bread.

Tips and Variations:

  • Adjust the heat: Use more or less chili powder to adjust the spiciness to your liking.
  • Add vegetables: Add vegetables like bell peppers, peas, or spinach to the sauce for extra flavor and nutrition.
  • Use different protein: This recipe can also be made with lamb, paneer (Indian cheese), or tofu.
  • Make it creamy: For a richer sauce, add a dollop of butter or a tablespoon of cashew paste.
