Spice-Rubbed Grilled Tri-Tip with Grilled Corn Salad
This recipe is perfect for a summer barbecue. The tri-tip is marinated in a flavorful spice rub, then grilled to perfection. The grilled corn salad is a delicious and refreshing side dish.
Ingredients:

For the Tri-Tip:
- 1 (2-3 pound) tri-tip roast
- 2 tablespoons olive oil
- 2 tablespoons steak seasoning
- 1 tablespoon BBQ spice
- 1 tablespoon Cajun seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon black peppercorns, coarsely ground

- 4 ears of corn, shucked
- 1 red bell pepper, diced
- 1 jalapeño, seeded and minced (optional)
- 1/2 red onion, diced
- 1/4 cup chopped cilantro
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions:
- Marinate the Tri-Tip: In a small bowl, combine the olive oil, steak seasoning, BBQ spice, Cajun seasoning, garlic powder, onion powder, and black pepper. Rub the mixture all over the tri-tip roast. Cover and refrigerate for at least 2 hours, or up to overnight.
- Prepare the Grill: Preheat your grill to medium-high heat.
- Grill the Tri-Tip: Grill the tri-tip for 5-7 minutes per side, or until it reaches your desired level of doneness. Use a meat thermometer to ensure it's cooked to a safe internal temperature (130-135°F for medium-rare).
- Rest the Tri-Tip: Remove the tri-tip from the grill and let it rest for 10 minutes before slicing against the grain.
- Grill the Corn: While the tri-tip is resting, grill the corn ears for 8-10 minutes, turning occasionally, until they are lightly charred.
- Make the Corn Salad: Cut the kernels off the corn cobs. In a large bowl, combine the corn kernels, red bell pepper, jalapeño (if using), red onion, cilantro, lime juice, and olive oil. Season with salt and pepper to taste.
